Ingredients

  • 1 ball pizza dough (about 250g)
  • 1/3 cup marinara sauce
  • 4 oz shredded mozzarella
  • 1/4 cup sliced bell peppers
  • 1/4 cup sliced red onion
  • 1/4 cup sliced mushrooms
  • Handful of baby spinach
  • Handful of cherry tomatoes, halved
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 500°F (260°C) with a pizza stone or steel inside.
  2. Toss the bell peppers, onion, and mushrooms lightly in olive oil.
  3. Stretch the dough and spread the marinara sauce evenly, leaving a border for the crust.
  4. Top with mozzarella, then scatter the vegetables and cherry tomatoes evenly.
  5. Bake for 8-10 minutes, until the crust is golden and the vegetables are tender.
  6. Top with fresh baby spinach right out of the oven so it wilts slightly. Slice and serve.
